1. UPDATES: Busy busy busy…

    Busy morning here @ Soma HQ - Transferred 2 batches to secondary and dry-hopped the hell out of them.  First up, is an Imperial IPA I’m calling 33 1/3, which contains equal amounts of:

    - 3 malts (2 Row, Rye, and Wheat)
    - 3 hops (Amarillo, Galaxy, and Citra)
    - 3 yeast strains (American, Belgian, and English ale)

    This one is clocking in around 8.5% and should be ready to imbibe in about a month.

    Up next is the small beer I made from the 2nd runnings of 33 1/3 - temporary (?) name: Fruit Basket.  Should be similar to its big brother, but here I used Wyeast’s Weihenstephan Hefeweizen yeast and added and an equivalent amount of Sorachi Ace hops to the party.  As an added twist, I’ll be aging it on blueberries.  Should clock in about 4.8% and be ready in about a month.

  3. Its just another Lambic Sunday….
Brewed the first - of hopefully MANY - Soma lambics yesterday afternoon in conjunction with 2nd Story Brewing. Split the 10 gallon batch into 2 carboys and spiked one with Wyeast 3763 “Roselare Blend” (containing a Belgian ale strain, a sherry strain, two Brettanomyces strains, a Lactobacillus culture, and a Pediococcus culture). In the other carboy we pitched another packet of Roselare but also added some other interesting stuff to differentiate it from the first: a vial of crazy/rare lambic, gueuze, & wild ale dregs PLUS a half-growler of dregs from various Cascade Brewing sours. Should be pretty crazy in 8-12 months. More to come on this one… :)

    This one should be ready in the coming weeks.  It will be a 100% Galaxy hopped Barleywine (with some being tucked away in a whiskey barrel for aging).
